Egg salad that is maximally creamy can still be incredibly healthy. Use yogurt and avocados for a smooth and nutritious egg salad.
Here is a basic version that is easy to make.
Creamy Egg Salad (Basic)
- 2 eggs, hard boiled
- 2 tbsp onion, chopped
- ¼ medium avocado, diced
- 1 tbsp Dijon mustard
- 2 tbsp plain Powerful Greek Yogurt
- 2 romaine lettuce leaves
- Peel and rough chop hard boiled eggs and place in a medium bowl. Add onion, avocado, mustard, and yogurt. Stir until mixed well. Serve on romaine lettuce leaves.
Tip: Add curry, cumin, or black pepper to taste
